chicken breast- 1 nos
ginger& garlic paste- 1 tsp
pepper powder - 1 tsp
red chilly powder-1sp
turmeric powder- 1/2 tsp
garam masala powder - 1/4 tsp
green chilly paste- 1tsp
coriander leaves chopped - 2 tsp
chopped capsicum - 1/4 cup
chopped carrot - 1/4 cup
chopped beans - 1/4 cup
mayonnaise - 2 tsp
mozzarella cheese - 1/2 cup
oil - 2tsp
salt to taste
In a Pressure cooker put the chicken breast, half cup water, salt & pepper powder. turn off the flame while getting one whistle.Use a sharp kitchen knife to cut the breasts into small cubes in preparation for mincing.
add oil in a pan.once the oil is hot add the chopped onion.when it brownish add ginger, garlic & green chilli paste, saute well up to the raw smell disappears.to this add chilly powder,garam masala powder, turmeric powder. saute well & add chopped capsicum, carrot & beans.then add minced chicken into it. cook it for five minutes turn off the flame & add the coriander leaves& mayonnaise, mix well.
For the dosa:
Raw rice / dosa rice - 1 cup
Urad daal - ½ cup
Fenugreek seeds (methi seed) - ¾ tsp
Salt - to taste
Ghee - for spreading on the dosa
Wash and soak dosa rice and urad daal, fenugreek seeds separately for about 5 - 6 hours. Grind both separately adding enough water (for grinding urad daal + methi seed, add the water in which it is soaked).
Mix both the batters together and keep it covered overnight for fermenting.
Add enough water if required (the batter should not be too thick nor too runny) and enough salt and mix well.
Heat a big pan , when the pan is hot, reduce the flame and rub the pan with a cloth or tissue paper (if the pan is too hot, you will not be able to spread the batter neatly). Pour a ladle full of prepared batter in the middle of the pan and spread it slowly with the ladle in a circular manner till thin dosa is formed. Increase the flame and spoon some ghee (clarified butter) all over and cook till golden brown and crisp.
Add some prepared chicken masala to this & spread some mozaralla cheese on the top , fold the dosa and serve immediately .
